VEGANUARY - My food diary

Let’s face it when people say that they're going on a diet for their New Years resolutions, some (maybe a lot) eye roll because we’re wondering how long it will last. Well, one of my new year ambitions is to try out being vegan.


As a child, I have always been known as the fusspot. I was fussy about my clothes, my food most of all. And that was simply because I just had this massive issue about different tastes and textures. It was definitely in my head for sure.


Cut a long story short as I’ve got older I have enjoyed trying new dishes and there’s been one diet that I have always wanted to try out which is the vegan diet! It wasn’t to hop on the bandwagon, I was recommended by quite a few friends.


This January I knew I had to try something a little different. And Veganuary was the best idea to click into a new mindset.

So I decided to do some research on the best recipes. And I thought I’d share some with you. So here are a few links before I share some dishes I created, inspired by these delicious plates!

For me, cooking is always something I found therapeutic. And trying something new was always going to be daring (and it’s me, so yeah I’m picky like I said!) Anyway, one of my favourite dishes so far. Is the noodle and vegan chicken.

This dish is easily done in twenty minutes, still sustaining the supplements you need. It’s a simple lunch dish you need to try out for yourself.


Another dish I think you should try out is something I was inspired by a fashionista friend, Lois (@lois_la_mode) chunky vegetable soup! Easy to make, it can serve you for lunch and dinner. Accompany it with some sourdough bread and your good to go!




Broccoli, I love my broccoli! So it’s been good to get plenty of it in my lunches and dinners. I have used it in my soups, noodles and even with my vegan pasta dish.

Now, it’s difficult to find a vegan pasta base. Unless you want to spend a bit of money, but I have found one that doesn’t cost an awful lot! And it’s from Waitrose!! (Mad right, but hey I do like a shop in Waitrose.)

Apply it with some vegan pesto (free from at Tesco) you can apply it after cooking the pasta and broccoli and your good to go.
